INGREDIENTS
- 1½ cups diced pineapple
- 1 Persian cucumber, peeled, diced and seeds removed
- 1 jalapeño pepper, diced (remove ribs and seeds if you can’t stand the heat)
- ¼ cup diced red onion
- ¼ cup minced cilantro
- 2 tablespoons extra virgin olive oil or any of your favorite of Nuvo's Flavored Crush Olive Oil.
- 1 lemon squeezed
- Kosher salt
- Freshly ground black pepper
INSTRUCTIONS
- Combine pineapple, cucumber, jalapeño pepper, red onion and cilantro in a medium-sized bowl.
- In a small bowl, whisk lemon juice, olive oil, salt and pepper and pour over the mixture.
- Stir well and enjoy.
