INGREDIENTS
2 eggs
Nuvos extra virgin olive oil
50g baby spinach leaves
1 tbsp cheddar cheese (optional)
Salt and freshly ground black pepper
Chilli flakes
INSTRUCTIONS
Break eggs into a small bowl. Sprinkle salt and freshly ground black pepper and whisk. In a non-stick pan, heat olive oil. Put spinach and stir until it wilts about 2 minutes.
Now add eggs to the pan and stir to combine with the spinach. Cook for 1-2 minutes and keep stirring occasionally. When they are just about set, turn off the heat. Now add cheese (if you want) and sprinkle chili flakes or any of your favorite herbs.
