INGREDIENTS

  • 2 tbsp Nuvos Extra Virgin Olive Oil
  • Nuvos Chocolate Balsamic (optional)
  • 3 yellow potatoes, shredded
  • 1 cup chopped yellow onion
  • 2 eggs, lightly beaten
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 tsp. Kosher Sea Salt
  • 1/4 tsp. Black pepper, freshly ground
  • Paprika

INSTRUCTIONS

  1. Preheat waffle iron and spray with cooking spray.
  2. Take a bowl and put shredded potatoes in it. Pour cold water over it to soak for 2 to 3 minutes. Potatoes should be immersed in water completely. Now drain and rinse. Take shredded potatoes in hand and squeeze the water. This will make crispy hashbrowns
  3. In a bowl, toss potatoes with oil, sea salt, pepper, cheese, onion, and paprika. Stir eggs into potato mixture.
  4. Just for fun try adding some of Nuvo's Cioccolato Balsamic as a syrup!
  5. Spoon half the potato mixture into waffle iron. Cook until golden brown, 5 to 8 minutes.
  6. Enjoy.

RECIPE NOTES

You can also use 4 cups hash brown instead of potatoes. In that case, just mix all of the ingredients and cook for 2 minutes.
