INGREDIENTS

  • 4 cups broccoli florets, chopped into bite-sized pieces
  • 4 large eggs
  • 1 cup egg whites
  • 1/4 cup shredded cheddar
  • 1/4 cup good grated cheese(pecorino romano)
  • 1 tsp Nuvo olive oil
  • salt and pepper to taste
  • cooking spray

INSTRUCTIONS

  1. Preheat oven to 350°.
  2. Steam broccoli for about 6-7 minutes. When broccoli is cooked, crumble into smaller pieces.
  3. Add olive oil, salt, and pepper. Mix well.
  4. Spray the non-stick cupcake tins with cooking spray and spoon broccoli mixture evenly into the tins.
  5. In a medium bowl, beat egg whites, eggs, grated cheese, salt and pepper. Pour into the greased tins over broccoli until a little more than 3/4th full.
  6. Top with grated cheddar and bake in the oven for about 20 minutes.
  7. Serve and enjoy.

RECIPE NOTES

You can opt for any vegetable like spinach, mushroom, peppers etc. or can even add nuts if you want to. That depends on your taste.
