INGREDIENTS
- 4 cups broccoli florets, chopped into bite-sized pieces
- 4 large eggs
- 1 cup egg whites
- 1/4 cup shredded cheddar
- 1/4 cup good grated cheese(pecorino romano)
- 1 tsp Nuvo olive oil
- salt and pepper to taste
- cooking spray
INSTRUCTIONS
- Preheat oven to 350°.
- Steam broccoli for about 6-7 minutes. When broccoli is cooked, crumble into smaller pieces.
- Add olive oil, salt, and pepper. Mix well.
- Spray the non-stick cupcake tins with cooking spray and spoon broccoli mixture evenly into the tins.
- In a medium bowl, beat egg whites, eggs, grated cheese, salt and pepper. Pour into the greased tins over broccoli until a little more than 3/4th full.
- Top with grated cheddar and bake in the oven for about 20 minutes.
- Serve and enjoy.
RECIPE NOTES
You can opt for any vegetable like spinach, mushroom, peppers etc. or can even add nuts if you want to. That depends on your taste.
