Tip: Read the entire recipe first, then peel and pith oranges and chop all vegetables.
Ingredients:
- 2 Oranges
- ½ cup fresh parsley leaves
- 1 shallot, minced
- 2 T capers, rinsed
- 2 T red wine vinegar
- 1 T extra virgin olive oil
- Salt & Pepper
Recipe:
Cut away peel and pith from oranges. Quarter oranges, and then slice crosswise into ½ inch thick pieces. Combine oranges, parsley, shallot, capers, vinegar, oil, salt, and pepper in a bowl and set aside for serving.
