SERVINGS: 6-8 servings
1 tbsp Nuvos extra virgin olive oil
1 small onion, chopped
5-6 mini bell peppers, chopped
1/2 cup mushrooms, chopped
3 cloves garlic, sliced
2 cans red beans
1 can pinto beans
1 cup non gmo corns
1 small can chopped jalapenos
1/2 tsp red chili flakes
In a large pot, add olive oil and heat over medium heat. Now add chopped onions and bell peppers and cook for approximately 3 minutes or until the peppers are softened. Then add chopped mushrooms and cook for an additional 2 minutes. The next step is to add beans(don't drain), corn jalapenos, chili flakes, and garlic. Heat through for 5 minutes.
Before serving, top with cheese and sour cream.
Read the entire recipe first. This is a spicy dish, so you can use as much or as little of the jalapenos and chili flakes as you like.
