INGREDIENTS

  • 1 tbsp Nuvos extra virgin olive oil
  • 1 small onion, chopped
  • 5-6 mini bell peppers, chopped
  • 1/2 cup mushrooms, chopped
  • 3 cloves garlic, sliced
  • 2 cans red beans
  • 1 can pinto beans
  • 1 cup non gmo corns
  • 1 small can chopped jalapenos
  • 1/2 tsp red chili flakes
  • Cheese
  • Sour Cream

INSTRUCTIONS

In a large pot, add olive oil and heat over medium heat. Now add chopped onions and bell peppers and cook for approximately 3 minutes or until the peppers are softened. Then add chopped mushrooms and cook for an additional 2 minutes. The next step is to add beans (don't drain), corn jalapenos, chili flakes, and garlic. Heat through for 5 minutes.

Before serving, top with cheese and sour cream.

RECIPE NOTES

Read the entire recipe first. This is a spicy dish, so you can use as much or as little of the jalapenos and chili flakes as you like.
