Granola Pumpkin Muffins

  • 1/4 cup Nuvo Olive Oil or Nuvo's Blood Orange Olive Oil
  • 2 Tbsp unsweetened applesauce
  • 1/2 can (15 ounce) pumpkin puree
  • 1/2 cup plain greek yogurt
  • 2 large eggs
  • 1/4 cup Blossom Honey


  • 1/3 cup sugar
  • 1/2 cup whole wheat flour
  • 1 cup all-purpose flour
  • 1 1/2 tsp. Sugar & Spice Blend
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 cup granola, plus more for topping
  • Foil muffin liners


Preheat the oven to 350 degrees. Take a bowl and mix all the dry ingredients except granola. Keep it aside. In a large bowl, mix the wet ingredients. Now stir in dry ingredients and mix. Now add granola. Line the muffin tins and spoon this mixture about 3/4 full. Press some granola on top of muffins. Bake about 25 minutes and check with the toothpick if it comes clean. Serve
